Let's Get Those Roots Roasting!
The temps are finally dropping and it's time to move on to the next season. Pick up everything and anything that's in season and looks good in the veggie aisle and start roasting.
Preheat your oven to 400º. Peel and trim your veggie selection where needed. Toss all of them with a couple tablespoons of olive oil. A little goes a long way when you get your hands in there and coat all the pieces. Spread out on a baking sheet and sprinkle with salt and pepper. Tuck in a few sprigs of hearty herbs like rosemary and thyme.
Roast for about 30 minutes until cooked through. They'll get a nice char while keeping a firm bite.
